In RT, requestors are always sent copies of all correspondence. Is there a way to send the correspondence with BCC’s instead of CC’s, so we can protect the e-mail addresses of our developers?

RT2 handles that a lot better.
If you’re running RT1, you can hack the source in lib/rt/support/mail.pm.
