From: address in RT e-mails

I need my e-mails to originate from @helpdesk.foo.com

Currently they are originating from @realservername.foo.com

Where do I configure this?

Your problem maybe one of Trusted users:

http://www.fsck.com/rtfm/search.html?LimitContent=trusted

But may also be one of of configuring your MTA to know about its other
domains for masquerading. Without knowing what your MTA is, specific
configuration settings cannot be given (if its sendmail, search for the
DM macro in sendmail.cf)
