We have a VPS server at Cloudways that hosts several other domains. Is this safe to run RT on a server that is already hosting other domains or does it need its own server?

If the server has the resources then it is no problem
So it wont disrupt say virtualmin services or cpanel services?
I think the thing that could interrupt those services is the web server you setup ( Typically Apache or nginx ) which will need to listen to web traffic on the server and route to existing services
Are there any instructions for this kind of setup?
What handles the incoming web request right now the server?
Looks like you have Apache running, so you can try setting up RT as a virtualhost in Apache:
