Does anyone have any refined methods in place for backing up their RT setup
that I could use? If not, would my best bet be to create a cron job that
backs up the RT root document tree and does a mysqldump and backs that up as
well? What else should I consider?

I just backup the config directory. Everything else is stock on my
installation, so can be recreated with a fresh install. I just tar it
up on another box.
The database is backed up nightly via pg_dump to another machine on
the network. I’m sure mysqldump works equivalently.
All of this runs out of cron.
