Based on the setup I just did for my new server, I would have to say yes…
few things you’d need to do(just off the top of my head… probably more
gotchas)
Everything else could probably be reused…

Definitely do-able. Start with the wiki page on MultipleInstances. Also, figure out how to use NameVirtualHost in Apache. Read all the options for configure and make sure you set up different local-prefixes for each instance. I can give you some working configurations (working in SLES10 anyway). I use postfix/sendmail and it’s pretty easy to set up aliases.
